Easy Sheet Pan Meal

Try this easy one pan meal that will surely become a staple in your home!


Easy and delicious! Those are the first two words I think of when trying to plan meals for my family during this season of life.


This recipe has quickly become a staple that I have on hand basically at all times. We are always looking for new ways to eat sweet potatoes. Not only are they delicious, but they come with a long list of health benefits. According to Healthline, they are rich in vitamins, minerals, antioxidants, and fiber. This meal has the added bonus of easy clean up since it only requires one pan for cooking!



INGREDIENTS:

Sweet Potatoes, 3-4 large

One Yellow Onion

Skinless Smoke Sausage

Olive Oil

Sheet Pan

Salt and Pepper

Smoked Paprika



RECIPE INSTRUCTIONS:

  1. Preheat your oven to 375 degrees.

  2. While the oven preheats, peel and dice your sweet potatoes into bite size pieces.

  3. Slice your skinless smoke sausage into thin half moon shapes.

  4. Slice your onion into stripes or slivers.

  5. Coat bottom of pan with a drizzle of olive oil. Add all ingredients to pan. Drizzle olive oil onto of pile of ingredients. Sprinkle with a generous amount of salt, pepper, and smoked paprika. Mix with hands to evenly coat.

  6. Place in the oven for 25-30 minutes stirring once halfway through. Cook until sweet potato is at desired softness when checked with a fork.
